5 years call for some Bubbles & Oysters

Though times are quite busy, our last week's fifth anniversary called for something special! Bubbles & Oysters with tarragon mignonette (inspired by Domaine Chandon, Napa Valley).

Northern California is not only famous for dark red Cabs and Merlots, heavenly Zins and oaky Chardonnays but it is also a major sparkling wine region. As the cold Pacific Ocean is near, "Bubbles & Oysters" is a typical Appetizer at many places. One of the nicest places is Domaine Chandon's étoile reataurant (http://www.chandon.com/etoile-restaurant.html) where fresh Hog Island Oysters from the nearby Tomales Bay can be enjoyed with a glass of Chandon Brut Classic Champagne - a perfect pairing.


Chandon's tarragon mignonette, serves 2 to 4:

120ml seasoned rice vinegar
2 tbsp minced shallot
1 tbsp minced fresh tarragon
Freshly ground pepper

Fresh oysters, shucked and served on the half shell

In a medium bowl, combine the vinegar and shallot and let stand for 5 minutes. Whisk in the tarragon and season with pepper. Spoon a little mignonette over each oyster. Serve at once...
